Karst … from the Indo-European root “kar” … means stone:
perhaps the true essence of this land.
Outcrops of white limestone dominate the landscape. The peculiar nature of the Karst plateau
lies in its wealth and in its fascinating underground world of passages and caves created by water
over the centuries.
The towns and villages that dot the plateau offer visitors warm hospitality, especially
during the summer, and the chance to discover their traditions and their incredible variety of wine
and food products.
Local wine from the characteristic osmizza can be tried or bought in the shop or directly in
the manufacturer’s own wine cellar. Osmizza wine cellars exist as a result of an ancient
imperial decree that allowed farmers to sell loose wine directly for an eight-day period.
Thanks to the frequent signs found along the roadside, it is not difficult to find these
places, where it is also often possible to try cheese, typical meat products and sausages, as well
as fresh eggs.
The Bora is a constant factor in this area: this strong wind can
reach and exceed the speed of 120 km/h, and features in many local legends. One local legend
describes it as an old witch who hides in the caves of the Karst, coming out of her cavern in the
winter and devastating everything with her frozen breath. Men have sought to imprison her in vain.
Her breath still sweeps the land today and swells the sea waves.
This is an area to be discovered. It is sometimes slow to reveal itself, but it is a truly
unforgettable place for those who love nature and ancient traditions.
